In past times, sourdough was used as a leavening agent. I read an article that showed the strong correlation between instant yeast and celiac's disease. When natural sourdough is used, it "eats" up a lot of the gluten in grains. How can wheat be considered the "staff of life" and yet so many (possibly nearly 30%) of people be intolerant or allergic to it? I also learned of the many changes that have been made to wheat over the years but I did not realize it was still possible to buy wheat in its original form.
